5 Easy 30 Minute Vegetarian Lunches!

So I’ve decided to compile a short list of meals that I make frequently that’s about 30 minutes to make or less!

I’ve mentioned these meals briefly during my weekly overview of some of the things we’ve had to eat on Sundays (check out the latest one here!)

The first one is super customizable: refried bean burritos. You can make your own refried beans or use a can (like I frequently do). I also like to add rice to it to stretch it and help it to fill us up. That’s the most basic recipe. When I have it, I add whole beans like a can of black or pinto or kidney beans. I always mix some salsa or diced tomatoes with chilies into the beans. I’ve also mixed in frozen spinach or peppers and corn for added bulk and veggies.

I’ve even mixed in sauteed mushrooms!

Homemade potato wedges are optional and take about 10-20 mins longer.

#2 is chili! I’ve made a vegetarian chili that I’ve almost perfected and will be sharing soon! So stay tuned!

I love to not only eat it by itself or on fries but on baked potatoes or with tortilla chips!

My third option if you’re not into beans today and want something Asian is fried rice! We usually use eggs because we get them free with WIC and that’s the only way most of us will eat them. *shrugs*

Saute some mixed frozen veggies to make it quickly and easily. I always try to keep those veggies on hand. I add in reduced sodium soy sauce, hoisin sauce, and sometimes teriyaki.

Then I mix in the rice, then eggs and cook until they’re done!

If you’re looking for something a little more filling and have the time to make them, my black bean burgers are so good and very easy to customize! You can add in the spices you prefer and top them however you want!

They are vegan as well! I make these at least once a week and you can get 4-6 patties, depending on how thick you want the burgers.

Mayo, cheese, pickles, veggies, hummus, ketchup, BBQ sauce! Whatever you love can top these burgers as easily as burgers made of beef or turkey!

The last one is the easiest on this list! It takes about 10 minutes and only if you mash the chickpeas with a fork like I do. I’m sure you could use a food processor and just pulse them but I’ve yet to try it.

You smash the chickpeas, mix in some mayo and seasoning and spread on bread (or toast cuz I like it better that way!). Then you add veggies and pickles. Or don’t. I always add at least pickles.

 

 

It’s a simple fish-free mock tuna sandwich I make quite often. My favorite seasoning is gourmet burger seasoning. SO GOOD!

 

Ok, now I’m hungry. I think I need to make me one of these for lunch today!
