What We Ate This Week: Pizza, WinCo Bagels & Donuts, Tacos, & Jason’s Deli

I wish we had a WinCo in South Carolina. The prices were good and then they had a lot of bulk bins with things I actually use (like rolled oats as opposed to flavored peanuts to make peanut butter). Also they have cheap & delicious bagels and donuts. We had the donuts as a snack before dinner and then the bagels were breakfast for me and my siblings. The girls had cereal instead. Or oatmeal.

Breakfast

Oatmeal, cereal, waffles, bagels. Quite and assortment this week. I think Miss Sassy had pb&j once too.

Nope, she had it twice. Once on whole wheat bread and once on a waffle because she requested it after I started her waffle.

Lunch

We ate out a few times, Burger Island, Cici’s Pizza, and probably one of my new favorite restaurants, Jason’s Deli.

 

One of my brothers got this massive burger but thankfully Burger Island has a yummy veggie burger! I loved it and even Miss Sassy had a few bites.

Mine. Yum. The curly fries are really good and so are their fried pickles that are in spears instead of chips. So good! I forgot to take a pic of those tho…

And Jason’s Deli has an amazing salad bar! I’m glad there’s one in SC because I can get the salad bar and not worry about what I’ll eat since I don’t eat meat.

The bar is quite large and varied. They also have tiny corn muffins and ginger muffins and free ice cream. A bit more expensive than other fast food restaurants but I think it’s worth it. Miss Sassy had chicken nuggets but didn’t care for the breading. She picked it off. Lol. But she also had some stuff from my plates from the salad bar and ice cream of course. Little T had stuff from my plate and ice cream and they both had a bit from my mama’s plate and she got it from the salad bar too.

Had an everything bagel with cream cheese, extra everything bagel seasoning and chia seeds. Really good!!

Dinner

Tacos, and falafel burgers I made with my little sister and veggie stir fry noodle bowl. So. Good.

Also, I love those plates!! Holds up my tacos! They are just like these plates here. The tortillas were flavored from WinCo. Jalapeno tortillas and chipotle tortillas. They weren’t spicy tho.

Noodle bowl! I gave the girls the same thing but separately and they enjoyed it! Gobbled up the noodles especially.

They were a bit spicy but the dip that came with it made it too spicy. So I thinned out some mayo with lime juice and added minced garlic.

Extras

Delicious banana bread from Liv B’s awesome cookbook with a couple of twists. One was brown sugar instead of regular because we were out. I like the change though because it made it less sweet but still good! Also my sister requested cinnamon and sugar on the top and bottom but we used cinnamon and brown sugar. My youngest sister and I made them!

They were eaten super fast. So glad I had enough bananas for two loaves or I wouldn’t have gotten any!

 

My youngest sister and I also made zucchini cupcakes which were also super good and the frosting was kind of caramel-y. So yummyyy. The recipe was in this book my mama owns.

Last week at the beginning, we also had some birthday cake from my sister! She’s the next oldest (I have 3 sisters and 3 brothers). The cake was from Kroger and very good and very pretty.

What We Ate This Week: Lots of Tacos, A Few Burgers, & Some Restaurants

We had a couple of birthdays this week and had cake too! Little T made more of a mess with this cake than her own. Lol.

 

 

 

 

It was good, but here’s a look at the rest of the week.

Breakfast

Oatmeal for Miss Sassy and I and cereal that Little T loves. I didn’t take a picture because really, who wants to see the same meal over and over? Lol.

I did heat up some frozen waffles for breakfast with some peanut butter and syrup for dipping for them. They preferred the peanut butter. Oh and some banana.

I didn’t have any banana.

Lunch

We went out to eat at a couple of different Chinese buffets for lunch and had McDonald’s as an in between lunch and dinner thing. Their Stroopwafel McFlurry is really chewy and caramel-y. I def recommend it!

We had sandwiches a couple of times as well and I cooked cheese tortellini with some sauce and steamed and mixed in some green beans. It was good and Little T gobbled up several of the tortellini and munched on the green beans as best she could. Miss Sassy ate a few but no green beans.

I had some cilantro lime black bean burgers leftover from dinner one evening. So gooood! The girls had sandwiches and crackers at that meal as well as a few grapes (cut of course).

Delicious leftover taco salad with a ton of lettuce, tomatoes and pico de gallo. I ate about halfway down and added some Doritos (or burrito chips as Miss Sassy calls them. ❤ )

One of my brothers made this waffle sandwich with fried eggs, cheddar cheese slices, and breakfast sausage for his lunch one afternoon. I thought it looked cool so decided to take a picture. Lol.

Dinner

I loooove these burgers and my family enjoyed them as well!! So good and the lettuce and pico de gallo and cilantro lime mayo made it amazing! Tater tots were a perfect addition!

My baby sister and I made them and we used a Ninja which blended it up a lot smoother than I usually do. I just added a bit extra flour/ Panko and less liquid so that I got the right consistency.

We had grilled cheese and tater tots one evening but I forgot to take a picture.

We also had hot dogs another evening. I tried these vegan hot dogs by LightLife and am honestly not a fan. They tasted fake, even with ketchup and I dipped them in a ketchup-mayo mix I had for my tots. I wish I could say I liked them but I’ve heard good things about Morning Stars hot dogs so I’ll try those next one day.

Vegetarian Bean Burgers: Cilantro Lime Black Bean Burgers!

The flavor idea for these burgers came from my mama. She said these were her favorite flavors for black beans. So thank you, Mama!

While this isn’t the first recipe I tried, it looks to be the most popular. I took a poll and it was voted to be the first one I share.

So here it is!

You will need a food processor. This is the one I use. However a Ninja works as well.

For toppings I used pico de gallo (I got this little tub at Aldi but you can just as easily make your own) and cilantro lime mayo.

First, here is how I made the mayo. I found the lime juice thins it a little bit. However, you can make it first then put the bowl in the fridge to thicken back up while the burgers cook.

 

Cilantro Lime Mayo:

  • 3 Tbsps of mayo
  • 1 Tbsp of lime juice (or 1 tsp per tbsp of mayo if you need more)
  • About a palmful of minced fine fresh cilantro

 

First carefully mix the juice into the mayo so it doesn’t slosh out (ask me how I know. Lol)

Then add in the cilantro and put in the fridge until ready to use.

Now for the burgers!

First the ingredients:

  • 1 15.5 oz can of black beans, drained and rinsed, reserving the liquid
  • 1 tsp of minced garlic
  • 1 tsp of onion powder
  • 1/4 cup of oat flour
  • 1/4 cup of Panko breadcrumbs
  • 1 Tbsp of lime juice
  • Palmful of chopped fresh cilantro

 

Rinse and drain your can of black beans, reserving the liquid in a bowl. You will need it later.

Pour the black beans into the processor with the lime juice and puree until chunky.

Add in the seasonings and minced cilantro and puree until combined, drizzling in the reserved bean liquid as needed.

Spray a pan with olive oil or nonstick spray then heat to medium.

When the mix is the right consistency, form into patties. Make sure the mixture is not too thin and it won’t fall off of the spoon or it will break when you flip it.

The mix doesn’t stick as much if your hands are slightly damp.

This is the proper consistency for the bean mixture.

 

Cook for 3-5 minutes and then flip when it releases and is browned. Then cook for another 3-4 minutes.

This batch will make 4-6 burgers depending on scoop size.

Clearly, I didn’t measure well this time but oh well. Lol.

These burgers are a favorite all around! So good! My family loved them when I made them this week.

You can also serve with lettuce and tomato instead of the pico de gallo.

You can skip the mayo and this burger would be vegan.

If you’d like to make a bigger batch, you can puree the beans alone and then mix the beans, oat flour, Panko, and seasonings in a bowl then form the patties.

5 Easy 30 Minute Vegetarian Lunches!

So I’ve decided to compile a short list of meals that I make frequently that’s about 30 minutes to make or less!

I’ve mentioned these meals briefly during my weekly overview of some of the things we’ve had to eat on Sundays (check out the latest one here!)

The first one is super customizable: refried bean burritos. You can make your own refried beans or use a can (like I frequently do). I also like to add rice to it to stretch it and help it to fill us up. That’s the most basic recipe. When I have it, I add whole beans like a can of black or pinto or kidney beans. I always mix some salsa or diced tomatoes with chilies into the beans. I’ve also mixed in frozen spinach or peppers and corn for added bulk and veggies.

I’ve even mixed in sauteed mushrooms!

Homemade potato wedges are optional and take about 10-20 mins longer.

#2 is chili! I’ve made a vegetarian chili that I’ve almost perfected and will be sharing soon! So stay tuned!

I love to not only eat it by itself or on fries but on baked potatoes or with tortilla chips!

My third option if you’re not into beans today and want something Asian is fried rice! We usually use eggs because we get them free with WIC and that’s the only way most of us will eat them. *shrugs*

Saute some mixed frozen veggies to make it quickly and easily. I always try to keep those veggies on hand. I add in reduced sodium soy sauce, hoisin sauce, and sometimes teriyaki.

Then I mix in the rice, then eggs and cook until they’re done!

 

What We Ate This Week_ Green Pancakes, Asian Noodles & Mac N Cheese! (13)

 

If you’re looking for something a little more filling and have the time to make them, my black bean burgers are so good and very easy to customize! You can add in the spices you prefer and top them however you want!

They are vegan as well! I make these at least once a week and you can get 4-6 patties, depending on how thick you want the burgers.

Mayo, cheese, pickles, veggies, hummus, ketchup, BBQ sauce! Whatever you love can top these burgers as easily as burgers made of beef or turkey!

The last one is the easiest on this list! It takes about 10 minutes and only if you mash the chickpeas with a fork like I do. I’m sure you could use a food processor and just pulse them but I’ve yet to try it.

You smash the chickpeas, mix in some mayo and seasoning and spread on bread (or toast cuz I like it better that way!). Then you add veggies and pickles. Or don’t. I always add at least pickles.

 

 

It’s a simple fish-free mock tuna sandwich I make quite often. My favorite seasoning is gourmet burger seasoning. SO GOOD!

 

Ok, now I’m hungry. I think I need to make me one of these for lunch today!

What We Ate This Week: First Birthday & Lots of Treats Then Back To Better Food!

SO. My sweet Little T turned a year this past weekend. *sobs internally*

That means we’ve had a lot of junk this week but I’m getting back to better fuel for us.

Cuz not only have we had cake, but (waaaay too many) chips and I’ve had cinnamon roll cheesecake. And while it was super tasty, I have definitely been more tired this week.

Breakfast

This week, we got some chocolate donuts because Miss Sassy requested them one day. We haven’t had all of them yet but I did pair them with apples and a drinkable smoothie for Miss Sassy and a couple of ounces of Silk soy milk for Little T.

 

 

We also had the usual oatmeal and I got some hash brown patties from Aldi that Little T absolutely loved. Girls had them with strawberries and soy milk (chocolate flavored with Nesquik for Miss Sassy) and I had a smoothie made with some puree, ice, soy milk & a dash of turmeric. Made it taste like fall. Lol.

 

 

Lunch

I made a double batch of pancakes one afternoon so that I could have some for the freezer later.

 

 

I spread some melted peanut butter over the top and added some raisins on the side for the girls and on top for me.

 

 

Sandwiches with fries, fruit, or veggies was for lunch too several times.

 

 

I think the girls had pb& j here and tuna below and I had smashed chickpeas both times. Got some roasted red pepper hummus for Little T to try and Miss Sassy and I haven’t had it in a while. Had it on the side sometimes and on sandwiches others.

Found out that Miss Sassy doesn’t care much for too much the gourmet burger seasoning on regular fries though she eats it when I make potato wedges. *shrugs*

After the rice and beans dinner (below) we had it for lunch and had some lettuce and I made mine into a salad. Miss Sassy liked the lettuce!! But not the cucumber or tomato again. But that’s ok. I’m sure she’ll try it some day. Little T likes the tomato.

Dinner

Had burgers several times, with fries and other sides. I’ve also made a refried bean dip with chips as a side.

Little T had beans and rice, Miss Sassy tried (and disliked) a burger with the dip and chips.

 

 

Roasted red pepper hummus tastes great on burgers too! Since the girls didn’t care for the burgers, I just gave them rice and black beans warmed up with salsa and adobo.

Had sandwiches for dinner too. I mean they’re quick and filling so…*shrugs*

One evening I made egg fried rice. The rice had mixed veggies, some mushrooms, a bit of ground ginger, .soy sauce, Thai peanut sauce from Liv B’s cookbook, a bit of teriyaki sauce (all I had left) and eggs of course. It looked kinda mushy after adding in the egg but Little T really enjoyed it. Ate most of her bowl. Didn’t care for the chunks of rice connected to the mushrooms and ate the beans out of the green beans. Miss Sassy didn’t like it.

My bowl here has a bit extra peanut sauce and Sriracha.

Little T’s First Birthday!

I can’t believe it. My beautiful little preemie, born at 35 weeks and 4 days at 6 lbs and 7 oz, turned one this weekend!

We had a little party with family and close friends and I made her cake! I used the lovely Liv B’s chocolate cake recipe, tripled it, made a sheet cake for the party guests and a round cake for Little T’s smash cake.

I took Wilton cake decorating classes when I was younger so I have some decent decorating skills.

She had a unicorn themed party. I was going to do Moana because she loves Moana but I couldn’t find any figurines to put on the top of the cake. *sigh*

I really enjoyed making her cake, even though it wasn’t quite what I was expecting. It was close though. Some of the tools I bought off of Amazon I’d never used before like the really neat icing pen that came with this set.

This little tool was great too. I put the extra frosting on it as I went as well as smoothed out the top with it.

These tools aren’t Wilton tools but were great just the same. I did get Wilton gel icing colors as they work a lot better than the normal liquid colors. They don’t thin icing and are vibrant without using too much color.

I just used a few colors for Little T’s cake to go with the theme’s palette. But she loved it and everyone had a great time at her party.

I just can’t believe my little 6 pound preemie is a 20 pound one year old now. This year has flown by. And while I love my sweet little baby being a baby, I love seeing her grow and learn.

Breakfast

I actually got a quick picture of breakfast this week. Trini was still sleeping so Lexi and I started on our cereal and Circle Time.

We also had some oatmeal. Nothing too crazy this week.

Whipped up some chili during the week. I ate the chili and some corn and the girls had a split quesadilla, corn, applesauce/puree, and beans.

Tuna, baked beans, some veggies and instant mashed potatoes (cuz there were some in the fridge). The green beans were frozen and when I steamed them in the microwave per bag instructions, they weren’t that great. However, later I warmed them by sauteing them in coconut oil, garlic powder and onion powder. They were pretty great like that!

I defrosted the minestrone soup from a few weeks ago, added a little extra water, a couple of frozen tomato paste cubes, and two cans of drained and rinsed chickpeas. We had some bread and margarine spread too.

Today, I made what I plan to call Super Spaghetti. Lol. I’m going to be sharing the recipe soon though it’s not complicated at all. A tad time consuming but very filling and both of the girls loved it!! Though I did burn the meatless balls because Little T didn’t want me to put her down and I got side-tracked. Lol.

Dinner

Made some black bean and kidney bean burgers with some yummy gourmet burger seasoning. And that’s also when I sauteed and seasoned the green beans.

This stuff is ah.maz.ing. in burgers and on potato wedges! I got 9 patties out of two cans which surprised me but I was happy that doubling the recipe really doubled the outcome. The only bad thing is it didn’t combine as well because my food processor is a bit too small for two cans but oh well.

Had soup for dinner at least once as well I believe. Then I had some bean burgers (girls weren’t a fan this time) while they had a PB&J and a package of cheesy broccoli rice. It was one of those like 10 minute or 12 minute in the microwave or stove top things. We were pressed for time for dinner that night and I needed a fast side and it worked out so well! Both girls loved that dinner. Lol.

Just goes to show you that kids don’t need fancy. Kids like it if it’s yummy. Whether it’s homemade (like when I made the banana bread ) or packaged (like this rice). So if you need to save your sanity one day (or two or three…) and microwave your kiddos some rice, here’s the permission you need. 😉

Scrambled eggs, chili and corn, some toast (with mayo for me and Little T but she didn’t care for it). I made mine into sandwiches. It was pretty good like that. Miss Sassy didn’t care for much of it but Little T loved everything but the toast. Lol.

What We Ate This Week: Green Pancakes, Asian Noodles, & Mac N Cheese!

Breakfast

Preeeetttyy sure our St. Patrick’s Day breakfast is a keeper!

I made green pancakes with the mix from Sam’s Club for breakfast. I used soy milk instead of water and added some green food coloring before cooking them. I realized later I should have added the rainbow sprinkles into it but oh well. Maybe next time. I did add some vanilla extract to the batter.

I melted some peanut butter in the microwave and drizzled it on mine and Miss Sassy’s and lightly smeared some on Little T’s before cutting her pancake into strips. I did add some of the rainbow sprinkles on top and Little T scraped them off and ate them before eating the pancake. 😀

Miss Sassy had two that morning, which is more than she usual has when we have pancakes.

They were such a big hit, I had hubby pull the leftovers out of the freezer before they froze because the girls kept eating on them throughout the day!

Lunch

Also on St. Patrick’s Day, we went to the local Children’s Museum so I packed us sandwiches and pretzels and raisins and a pancake and homemade fruit pouch for Little T so we could eat before we went grocery shopping after having a blast at the museum.

Sandwiches actually was on the menu more than once because we went out several times this week.

One afternoon, I made macaroni and cheese in the Crockpot and we had tuna with them. Some of us had it plain and some on bread or toast. Miss Sassy preferred her tuna with mayo tho I gave her both with mayo and without. I tried adding some spices to my sandwich but all I got was heat. No extra flavor. Oh well. Maybe it was the pickles…hmmm…


We also had these yummy teriyaki noodles from Aldi.

I stir fried some frozen veggies and added some eggs for egg fried veggies.

I also mixed in some hoisin sauce, reduced sodium soy sauce, and some spicy saigon sizzle stir fry sauce. SO GOOD!

We had the rest of pizza from a previous night’s dinner.

Smoothies with lunch once was due to shooting some pictures for a previous blog post and the girls loved them.

This was a different sandwich but good! I smashed some chickpeas and mixed in some mayo and some gourmet burger seasoning from Sam’s Club. So good!

Dinner

Refried bean burritos again with rice and some diced tomatoes w/ chilies mixed into the beans. Had some leftover cheese from the macaroni so I made a big quesadilla for the girls to split and added some cheese to mine and hubby’s burritos. Miss Sassy helped me make dinner by sprinkling cheese on everything. 🙂 🙂

In a rush, we had peanut butter and jelly as well. Huh. We had a lot of sandwiches this week. Lol.

We got home late one evening and were tired so we just had pizza and cheese bread and bananas. Girls were happy. 🙂

What To Do With Purees When You’re Baby-Led Weaning

Baby-led weaning is the concept of feeding a baby modified versions of what everyone else is eating as long as they meet all of the readiness signs. I didn’t do this fully with either of the girls but took to it more around the 8 or 9 month mark for Little T as I started reading the book. (<– affiliate link)

The first quick solution is as a side. Even when you’re baby-led weaning, you should still introduce soft foods. I have done a combination of BLW and purees so I tend to feed her the puree. Also it’s easier since I don’t have to worry about the mess because when Little T is done eating, she wants down. Now. So it makes cleaning easier!

I usually do it when I give Miss Sassy applesauce as it’s really no different. I’ve given the purees to her as well but not as often.

I’ve also put the puree in reusable pouches! The ones I bought off of Amazon are no longer available however the spout cleaning brushes are! (<– affiliate link) I definitely recommend the brushes if you get the pouches as it makes cleaning easy!

These are great for on the go! Usually, I’ll take it in a lunchbox like I did when I took the above picture because I don’t know how they’ll hold up in a diaper bag and the puree technically needs to be eaten within 24 hours of opening. So I’ll make them one at a time.

The girls love it when I put the puree in the blender with frozen fruit and sometimes a little frozen spinach as a smoothie!

This is one of my favorite options as well!

It makes it so simple to use up multiple little jars/cups and you don’t taste the carrots or sweet potatoes if you use a veggie one! 😉

This one had a bit of frozen spinach, 2 cups of peaches, some frozen peaches, a couple of large scoops of Greek yogurt and a cup that was labeled sweet potato, mango, kale but all we tasted was peaches! Girls looooved them!

I haven’t used any green veggie cups though like green beans or peas. I can’t bring myself to put that in my smoothie. Hehe…

What We Ate This Week_ Another Birthday, Some Burgers & Pancaaakessss! (3)

I’ve also mixed it into pancake batter to replace some of the liquid like when I made the pumpkin pancakes a couple of weeks ago or mixed it into the baby cereal. I get the multigrain and mix it into a kind of oatmeal. I did this before when I first started transitioning to BLW and it was easier for Little T to eat because the texture wasn’t as thick as regular oatmeal.

I think I’ve done it in other batters as well such as muffins. But I’m not positive.

My last simple idea is as a dip. I’ll toast a slice of bread and dip it in the puree for Little T and then hand her the strip. It allows her to eat the puree a little more independently but not as messily! Just be sure to toast the bread so that it doesn’t fall apart and it doesn’t turn super gummy and become a choking hazard. Especially if your baby doesn’t have any teeth yet. It also works with waffles and pancakes if your baby is older with teeth!

What We Ate This Week: Lots of Leftovers!

Besides breakfast, everything I made this week ended up making a lot of leftovers so that’s what we ate on this week!

Breakfast

Finished off the banana bread on Sunday. Def gonna have to find some more easy yummy fruit/ veggie quick breads because Miss Sassy loved it!

Got a lot of cereal with WIC this past week so we’ve had that. Little T enjoys Cheerios with a bit of soy milk so it’s good all around! Lots of iron in those little Os!

And oatmeal of course.

Lunch

Hubby wanted to try a mango habanero blend of seasonings on some chickpeas. I enjoyed them too when I mashed and mixed them with mayo as a chickpea salad and on toast. Had it with some leftover chili on fries.

Girls had the chili and fries separately and kiwi.

One afternoon we had black beans and rice with crispy potatoes and kiwi.

We also had quick pb&js and applesauce and yogurt.

Dinner

Made another batch of black bean burgers with potato wedges and they were so good! Basically the same concept as the crispy potatoes.

Slice into wedges then soak in water for at least a half hr to help with the crispy factor then drain and toss with a little oil and season. I forgot to put a little oil on the wedges but they were still good!
